The origin of the Castillo variety The Castillo variety was developed by Cenicafé after several years of research to obtain plants resistant to rust, one of the coffee diseases. Its name is due to the researcher Jaime Castillo Zapata, who obtained the Colombia variety, precursor of Castillo. This variety was released to coffee growers in 2005 and is made up of different regional varieties that are better adapted to the type of soil in each place.
